Bacon Chicken Cheese Ball

Equipment

  • 1 Propane Stove

Ingredients

  • 2 large Chicken breasts cooked and shredded
  • 8 oz Cream cheese softened
  • 1/2 cup Cheddar cheese shredded
  • 1/4 cup Green onions chopped
  • 1 oz Ranch seasoning
  • 1/2 cup Bacon bits
  • 1/4 tsp salt and pepper
  • 1 cup Pecans chopped

Instructions

  • Over a propane stove on medium-high heat, fully cook 2 chicken breasts. Let cool and shred with forks or with a mixer in a bowl.
  • In a large bowl, add chicken and other ingredients, mixing until well combined.
  • Shape the mixture into a ball and wrap it in plastic wrap.
  • Refrigerate the cheese ball for at least 1 hour.
  • When ready to serve, roll the cheese ball into the chopped pecans. Serve with crackers.

If you’ve ever been to a fondue restaurant, you’ve probably noticed that there’s something special about the experience. Not only is it a great way to share a meal with friends, but it’s also a lot of fun!

Fondue is a dish that originates from Switzerland. It’s made by cooking meat, seafood, or vegetables in a flavored broth or oil. The broth is kept simmering in a pot in the center of the table, and diners use long forks to cook their food in the hot liquid.

If you’re thinking about making fondue at home to celebrate National Cheese Fondue Day (4/11), then you’ve come to the right place! Keep reading for a beginner’s guide to making fondue as well as two yummy recipes first-timers can make.

Equipment

To make fondue, you’ll need the following equipment:

– Fondue pot: This is a special pot designed for fondue. It usually has a heating element or uses a Sterno can to keep the broth or oil hot.
– Long forks: These are used to dip the food into the broth or oil.

Types of Fondue

There are three types of fondue to choose from:

– Cheese fondue: Cheese fondue is the most well-known type of fondue. It is made by melting cheese and white wine in a fondue pot and then dipping bread cubes, fruit, or raw veggies into the melted mixture.
– Chocolate fondue: Chocolate fondue is a sweet alternative to cheese fondue. It is made by melting chocolate and cream in a fondue pot and then dipping fruits, marshmallows, pretzels, or cake into the melted mixture.
– Meat/seafood/vegetable fondue: Also known as fondue bourguignonne, is made by cooking small pieces of meat, seafood, or vegetables in hot oil or broth and is usually served with dipping sauces.

Grilled Italian Wings

Equipment

  • 1 Propane Grill

Ingredients

  • 2-3 pounds wings
  • 1 large bottle Italian dressing

Instructions

  • Take wings and dump into a large sealable baggie or a large bowl with a lid. Pour Italian dressing so all wings are covered.
  • Marinate in refrigerator for 48 hours (flipping bag or stirring bowl every 8-12 hours).
  • Preheat propane grill to medium/high heat.
  • Place wings on propane grill and cook for 5-7 minutes. Turn wings over and cook again for 5-7 minutes (wings will stick to the grill if not ready to turn).
  • Flats will be ready to remove. Drums may need another 1-2 minutes.
  • Serve with carrots, celery, and blue cheese dressing.

  • 1 Propane Oven

Ingredients

  • 1 cup cheddar cheese shredded and divided
  • 1 cup Monterey jack cheese shredded and divided
  • 2 tbsp water
  • 2-4 tbsp taco season
  • 1/ lb. ground beef
  • 2 tubes crescent rolls 8 oz each
  • 1/2 medium head of iceberg lettuce shredded
  • 1 medium tomato chopped
  • 4 stems green onion sliced
  • 1 medium red pepper diced

Instructions

  • In a large bowl, combine 1/2 cup cheddar and 1/2 cup Monterey cheese, water & taco seasoning. Crumble beef over mixture & mix well. Shape into 16 balls.
  • Place meatballs on a greased rack in a shallow baking pan. Bake uncovered, at 400 degrees F for 12 minutes or until the meat is no longer pink. Drain the meatballs on paper towels.
  • Reduce heat to 375 degrees F. Arrange crescent rolls on a greased 15 inch pizza pan, forming a ring with pointed ends facing the outer edge of the pan & wide ends overlapping.
  • Place a meatball on each roll; fold over the meatball and tuck under the wide end of roll (meatball will be visible). Repeat. Bake for 15-20 minutes or until rolls are golden brown.
  • Transfer the ring to a serving platter. Fill the center of the ring with lettuce, tomato, green onions, peppers, remaining cheese, and sour cream, salsa, and guacamole if desired.

Today (2/21) is National Grain Free Day. There are so many grain free recipes available today, especially because of the Keto movement. Today we are sharing a grain free bagel recipe.

Equipment

  • 1 Propane oven and stove

Ingredients

  • 3 cups blanched almond flour
  • 1 1/4 cup tapioca starch
  • 2 tsp baking powder
  • 1 tsp kosher salt
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 2/3 cup warm water
  • 1 large egg yolk beaten
  • 2 tbsp everything bagel seasoning optional

Instructions

  • Preheat oven to 350° F and line a baking sheet with parchment paper.
  • Combine all ingredients (except egg yolk) in a large bowl and mix by hand until smooth.
  • Fill a large pot half full of water and bring to a boil. Once the water has come to a boil, reduce the heat slightly to keep water at a gentle boil.
  • Divide the dough into 6 equal portions. Wet hands and form each portion into a ball.
  • Flatten the ball just slightly and press a finger in the middle of the ball and move in a small circle, creating a hole in the middle. Repeat with each bagel.
  • Drop 2 bagels into boiling water and wait until they float to the top. With a slotted spoon, gently remove them and arrange them on the parchment-lined baking sheet. Repeat until all bagels have been boiled.
  • Bake in oven for 10 minutes.
  • Remove bagels from oven and brush with beaten egg yolk. You can leave plain or top each bagel with everything bagel blend, sea salt, or topping of your choice.
  • Return bagels to the oven and cook for 20-25 more minutes until golden brown.
  • Remove from oven and allow to cool for 10-20 minutes before serving.

Equipment

  • 1 Propane pizza oven or propane oven

Ingredients

  • 2 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 tbsp Olive oil
  • 1 cup Warm water
  • 1 handful Cornmeal optional

Instructions

  • Preheat oven to 425 degrees.
  • In a large bowl, stir together the dry ingredients.
  • dd the olive oil to the water, then pour them both into the bowl with the dry ingredients. Stir until a loose ball of dough forms and no more dry flour remains on the bottom of the bowl. 
  • If your dough is too dry, slowly add a little more water. If your dough is too wet, slowly add a little more water. Do this until you get the desired consistency.
  • Turn dough onto a lightly floured surface and knead 10 times. Shape dough into a ball; cover with an inverted bowl and let sit for 10 minutes.
  • Roll dough into a 12-inch circle baking sheet. dusted with cornmeal.
  • Bake crust in preheated oven for 8 minutes; top with your favorite sauce, cheese, and toppings and bake until crust is golden brown, about 10 minutes more. Slice and serve immediately.

Grilled Jalapeno Poppers

Finger foods always draw a crowd. Wrap anything in bacon and you're got a sure fire hit on your hands. Jalapeno poppers are great to cook while tailgating or to bring to a party. Make as many as you need, they are quick and easy.

Equipment

  • 1 Propane Stove
  • 1 Propane Grill

Ingredients

  • 10 large Jalapenos sliced in half
  • 8 oz Cream cheese softened
  • 8 oz Cheddar cheese shredded
  • 2 tbsp Parmesan cheese grated
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 pinch Salt and pepper
  • 6 slices Bacon cooked
  • 20 slices Bacon uncooked

Instructions

  • Cut jalapeno peppers in half, spooning out the white flesh and seeds. Do not remove stems. Soak in water for 30 minutes to 1 hour for a mildly hot taste.
  • On a stope top, cook the bacon in a pan over medium heat until the fat renders and the bacon is crisp, about 8-10 minutes. Drain the bacon on paper towels and let them cool. Crumble them into a mixing bowl, but reserve some for topping.
  • Add the softened cream cheese, cheddar cheese, parmesan cheese, and spices to the mixing bowl. Mix until well combined. It should be nice and creamy.
  • Stuff jalapeno halves with the spiced cream cheese mixture.
  • Wrap the stuffed jalapenos with a slice of bacon. Secure with toothpicks.
  • Heat a propane grill to medium heat and grill the jalapeno poppers for 15-20minutes, until the bacon cooks through.
  • Remove from heat and cool them just a bit. Garnish with extra crumbled bacon.

Ingredients

Wings

  • 3 pounds Chicken wings, cut/split at joint or defrosted plain wings
  • 1 tbsp Oil
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Marinade

  • 1 cup Soy sauce
  • 2 tbsp Corn starch
  • 1/2 cup Pineapple juice
  • 1/2 cup Brown sugar
  • 1/2 cup Water
  • 2 tbsp Ground ginger or 1 tbsp fresh grated
  • 1 tbsp Garlic
  • 1 tbsp Sesame seeds

Instructions

Wings

  • In a small bowl, whisk together the pineapple juice and cornstarch until dissolved. Whisk in the remaining ingredients. Transfer to a small saucepan and bring to a simmer on medium heat, whisking until thickened, about 2-3 minutes. Remove from the heat and set aside. Reserve half for brushing on the wings during cooking and half for serving.
  • Place clean dry wings on a grill with medium heat and brush with oil, then sprinkle with salt and pepper.
  • Grill wings 8-10 minutes per side or until cooked through. During last few minutes of grilling, brush wings with marinade.
  • Remove the wings from the grill and toss the remaining teriyaki sauce on top of the wings.
  • Garnish wings with sesame seeds and serve with blue cheese or ranch dressing.

  • 16 oz Sausage
  • 8 oz Cream cheese
  • 1 bag Nacho chips scoops
  • 10 oz Canned tomatoes and green chilis drain half the juice

Instructions

  • In a cast iron skillet, cook the sausage until medium brown. To the sausage and drippings, add the cream cheese and tomato/chili mix.
  • Cook on low heat for 30 minutes. Stir together after 15 minutes. Cook the remaining time.
  • Serve with scoops nacho chips.
