Grilled Raisin-Stuffed Chicken Rolls

Celebrate this wrinkly little fruit on National Raisin Day (4/30) with this delicious recipe submitted by Doug Z., who works out of our Whippany, NJ office.

Equipment

  • 1 Propane Grill

Ingredients

  • 4 boneless Chicken breasts skinless
  • 1 cup Raisins
  • 1/2 cup Walnuts chopped
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Parsley fresh chopped
  • 1/4 cup Mint fresh chopped
  • 2 cloves Garlic minced
  • 1 tbsp Lemon zest
  • 1/2 tsp Cumin ground
  • 1/2 tsp Coriander ground
  • 1/4 cup Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Salt and pepper

Instructions

  • Preheat your propane-powered grill to medium-high heat.
  • Place the raisins in a small bowl and cover with hot water. Let them sit for about 10 minutes to plump up, then drain and set aside.
  • In a medium-sized mixing bowl, combine the plumped raisins, chopped walnuts, crumbled feta cheese, chopped parsley, chopped mint, minced garlic, lemon zest, ground cumin, and ground coriander. Stir well to combine.
  • Lay the chicken breasts on a clean work surface and season both sides with salt and pepper. Place a piece of plastic wrap over the chicken and use a meat mallet or rolling pin to pound the chicken breasts to an even 1/4-inch thickness.
  • Spread the raisin mixture evenly over each chicken breast, leaving a small border around the edges.
  • Starting at the narrower end, roll up each chicken breast tightly, enclosing the filling. Use toothpicks or kitchen twine to secure the rolls.
  • In a small bowl, whisk together the olive oil and lemon juice. Brush the chicken rolls with the mixture to coat them evenly.
  • Place the chicken rolls on the preheated grill, seam-side down, and cook for about 7-8 minutes per side, or until the chicken is cooked through and has an internal temperature of 165°F (74°C).
  • Remove the chicken rolls from the grill and let them rest for 5 minutes before removing the toothpicks or kitchen twine.
  • Slice the grilled raisin-stuffed chicken rolls into 1-inch thick slices and serve immediately.

Italian Bread

National Bake Week is a week created to encourage people to bake from home. Why not try your hand at some homemade Italian bread? Nothing tastes as good as freshly baked bread straight out of the oven! Thanks to Jenny R. in our Chester, NY office for the submission.

Equipment

  • 1 Propane Oven

Ingredients

  • 2 cups Warm water 105-115 degrees F
  • 2 1/4 tsp Active dry yeast
  • 1 tbsp Sugar
  • 2 tbsp Extra Virgin Olive Oil
  • 2 1/2 tsp Sal
  • 5 cups Bread flour
  • 1 large Egg whites
  • 1 tbsp Sesame seeds
  • 1 can Cooking spray

Instructions

  • Pour 1 cup of warm water into the bowl of a stand mixer. Whisk in the yeast and the sugar. Let proof (turn foamy) for 5-10 minutes.
  • Whisk in the remaining water, plus the olive oil and salt. Add the bread flour. Use the mixer's dough hook attachment to mix and knead the dough at low speed for 2 minutes.
  • Turn off the machine and let the dough rest for 5 minutes. Continue kneading at low speed until a fairly smooth dough develops--about 7 minutes.
  • Scrape the dough onto a lightly floured work surface. Knead by hand until the dough feels very smooth--about 1 minute.
  • Form the dough into a ball, place it in a large, lightly greased mixing bowl, and flip to grease the other side. Cover the bowl with cling wrap and let the dough rest until doubled in volume--90 minutes to 2 hours.
  • Deflate the dough by punching it, and then turn it onto a lightly floured work surface. Pat the dough into an oval shape, and then roll it up into a short, fat loaf.
  • Transfer the loaf to a parchment-lined baking sheet, cover it loosely with cling wrap, and let rest until doubled in volume --about 30 minutes. After 15 minutes have passed, center the oven rack and preheat the oven to 425 degrees F.
  • Put the egg white in a small bowl, and whisk it until it turns slightly foamy. Brush all of the white over the fully risen loaf. Sprinkle the top of the loaf with sesame seeds.
  • Bake until the bread colors deeply, and the loaf sounds hollow when tapped with the fingers--30 to 40 minutes. Transfer the loaf to a wire rack and let it cool completely before slicing.

Overnight French Toast Casserole

This is French toast with all the flavor and none of the hassle! Kristine P. in our Whippany, NJ submitted this recipe to help celebrate National Toast Day (2/23).

Equipment

  • 1 Propane Oven

Ingredients

French Toast

  • 1 loaf Brioche bread
  • 8 large Eggs
  • 2 cups Half and half
  • 1/2 cup Milk
  • 3 tbsp Granulated sugar
  • 1 1/2 tsp Vanilla extract
  • 1/2 tsp Cinnamon ground
  • 1/2 tsp Nutmeg ground
  • 1/2 tsp Salt

Cinnamon Crunch Topping

  • 1 1/2 sticks Butter softened
  • 1 cup Light brown sugar packed
  • 1 tbsp Light corn syrup optional
  • 1 tsp Cinnamon ground
  • tsp Nutmeg ground

Instructions

  • Prepare a 9"x13" baking dish by coating the entire inside of the dish with butter or cooking spray.  Set aside.
  • Slice the brioche bread, about 1-inch thick. Arrange slices in your prepared baking dish in rows, overlapping the slices. Set aside.  
  • In a large bowl, whisk eggs. Add half-and-half, milk, sugar, vanilla, cinnamon, nutmeg, and salt. Whisk until well combined.
  • Pour the egg mixture over the bread slices, making sure they are covered evenly. Spoon some of the mixture in between the slices making sure all the slices are completely covered.  Cover with foil and refrigerate overnight.
  • The NEXT DAY, preheat oven to 350°F. Meanwhile, carefully flip each piece of bread over to make sure everything is nice and coated with the mixture.
  • Combine all ingredients in a medium bowl and mix to combine.  Spoon the topping on top of the prepared bread slices.  Then spread evenly over the bread (like you are icing a cake). You can also spread some of the mixture in between the slices to make sure the entire slice is covered (if you prefer).
  • Bake for 35-40 minutes (no need to cover with foil), until puffed and lightly golden.

Grain Free Bagels

Today (2/21) is National Grain Free Day. There are so many grain free recipes available today, especially because of the Keto movement. Today we are sharing a grain free bagel recipe.

Equipment

  • 1 Propane oven and stove

Ingredients

  • 3 cups blanched almond flour
  • 1 1/4 cup tapioca starch
  • 2 tsp baking powder
  • 1 tsp kosher salt
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 2/3 cup warm water
  • 1 large egg yolk beaten
  • 2 tbsp everything bagel seasoning optional

Instructions

  • Preheat oven to 350° F and line a baking sheet with parchment paper.
  • Combine all ingredients (except egg yolk) in a large bowl and mix by hand until smooth.
  • Fill a large pot half full of water and bring to a boil. Once the water has come to a boil, reduce the heat slightly to keep water at a gentle boil.
  • Divide the dough into 6 equal portions. Wet hands and form each portion into a ball.
  • Flatten the ball just slightly and press a finger in the middle of the ball and move in a small circle, creating a hole in the middle. Repeat with each bagel.
  • Drop 2 bagels into boiling water and wait until they float to the top. With a slotted spoon, gently remove them and arrange them on the parchment-lined baking sheet. Repeat until all bagels have been boiled.
  • Bake in oven for 10 minutes.
  • Remove bagels from oven and brush with beaten egg yolk. You can leave plain or top each bagel with everything bagel blend, sea salt, or topping of your choice.
  • Return bagels to the oven and cook for 20-25 more minutes until golden brown.
  • Remove from oven and allow to cool for 10-20 minutes before serving.

Homemade No Yeast Pizza Dough

On National Pizza Day (2/9) don't spend hours making pizza dough! Instead, make our fast (15-minutes) yeast-free dough recipe.

Equipment

  • 1 Propane pizza oven or propane oven

Ingredients

  • 2 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 tbsp Olive oil
  • 1 cup Warm water
  • 1 handful Cornmeal optional

Instructions

  • Preheat oven to 425 degrees.
  • In a large bowl, stir together the dry ingredients.
  • dd the olive oil to the water, then pour them both into the bowl with the dry ingredients. Stir until a loose ball of dough forms and no more dry flour remains on the bottom of the bowl. 
  • If your dough is too dry, slowly add a little more water. If your dough is too wet, slowly add a little more water. Do this until you get the desired consistency.
  • Turn dough onto a lightly floured surface and knead 10 times. Shape dough into a ball; cover with an inverted bowl and let sit for 10 minutes.
  • Roll dough into a 12-inch circle baking sheet. dusted with cornmeal.
  • Bake crust in preheated oven for 8 minutes; top with your favorite sauce, cheese, and toppings and bake until crust is golden brown, about 10 minutes more. Slice and serve immediately.

  • 1 cup Oil
  • 4 large Eggs
  • 2/3 cup Water
  • 2 cups Pumpkin

Instructions

  • Mix dry ingredients together and make a well in the middle.
  • Add the remaining ingredients and mix well.
  • Divide into 3 floured & greased loaf pans.
  • Bake 350 degrees for 1 hour or until set.
  • Cool 10 minutes and take out of pans.

  • Fold in Blueberries.
  • Pour in 8x4 Pans
  • Sprinkle crumble mixture on top loaves before putting in the oven.
  • Bake for 45 minutes or until a toothpick comes out clean.
