Salmon and Asparagus in Tinfoil

If you're looking for a simple and delicious recipe that takes 30 minutes or less, this salmon and asparagus recipe is it. This is a bright and flavorful dish that's perfect (and healthy) for lunch or dinner. Thanks to Michelle K. in our Whippany, NJ office for the submission.

Equipment

  • 1 Propane Grill

Ingredients

  • 4 8 oz Salmon filets
  • 1 1/2 lbs Asaragus
  • 2 tsp Extra virgin olive oil
  • 1/2 tsp Salt and pepper
  • 1/2 tsp Garlic powder
  • 1 1/2 tbsp Lemon juice

Instructions

  • Preheat the grill to grill to a temperature between 400°-425° and begin to meal prep.
  • Using a paper towel, gently pat dry each salmon filet.
  • Mix 2 tsp of olive oil with garlic powder.
  • Drizzle top of each salmon fillet with 1 tsp of olive oil mixture and season top with salt and pepper to taste.
  • Trim the ends from asparagus stalks. Drizzle 1 tsp of olive oil mixture over asparagus and then sprinkle with salt and pepper. 
  • Drizzle lemon juice over the asparagus.
  • Place salmon filets into foil and fold or pinch the sides of foil up and over the top of the fish until it is completely enclosed with about an inch of space on top for the foil to allow the air to circulate.
  • Prep and wrap asparagus in foil the same way as salmon filets.
  • Place packets on grill. Salmon typically cooks quickly, however grill time for salmon depends on the size and thickness of the filets. Typically, it only takes 8 -10 minutes to fully cook. Other cook times: 8-minutes medium rare, 10-minutes medium, 11-minutes medium-well, 13-minutes well-done.
  • Asparagus typically takes 12-15 minutes to cook but may take a little longer depending on the size and thickness of the stalks.
  • Remove salmon in tinfoil from grill and use a fork to determine doneness.
  • Let the filets rest approximately 3-5 minutes before serving.
  • Optional seasoning or garnish: 2 tablespoons of parsley, cilantro, or dill sprinkled on top of the salmon and asparagus. Use a few pieces of thinly sliced lemon to top the salmon filets and asparagus.

Ingredients

  • 2-3 pounds wings
  • 1 large bottle Italian dressing

Instructions

  • Take wings and dump into a large sealable baggie or a large bowl with a lid. Pour Italian dressing so all wings are covered.
  • Marinate in refrigerator for 48 hours (flipping bag or stirring bowl every 8-12 hours).
  • Preheat propane grill to medium/high heat.
  • Place wings on propane grill and cook for 5-7 minutes. Turn wings over and cook again for 5-7 minutes (wings will stick to the grill if not ready to turn).
  • Flats will be ready to remove. Drums may need another 1-2 minutes.
  • Serve with carrots, celery, and blue cheese dressing.

Grilled Jalapeno Poppers

Equipment

  • 1 Propane Stove
  • 1 Propane Grill

Ingredients

  • 10 large Jalapenos sliced in half
  • 8 oz Cream cheese softened
  • 8 oz Cheddar cheese shredded
  • 2 tbsp Parmesan cheese grated
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 pinch Salt and pepper
  • 6 slices Bacon cooked
  • 20 slices Bacon uncooked

Instructions

  • Cut jalapeno peppers in half, spooning out the white flesh and seeds. Do not remove stems. Soak in water for 30 minutes to 1 hour for a mildly hot taste.
  • On a stope top, cook the bacon in a pan over medium heat until the fat renders and the bacon is crisp, about 8-10 minutes. Drain the bacon on paper towels and let them cool. Crumble them into a mixing bowl, but reserve some for topping.
  • Add the softened cream cheese, cheddar cheese, parmesan cheese, and spices to the mixing bowl. Mix until well combined. It should be nice and creamy.
  • Stuff jalapeno halves with the spiced cream cheese mixture.
  • Wrap the stuffed jalapenos with a slice of bacon. Secure with toothpicks.
  • Heat a propane grill to medium heat and grill the jalapeno poppers for 15-20minutes, until the bacon cooks through.
  • Remove from heat and cool them just a bit. Garnish with extra crumbled bacon.

Ingredients

Wings

  • 3 pounds Chicken wings, cut/split at joint or defrosted plain wings
  • 1 tbsp Oil
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Marinade

  • 1 cup Soy sauce
  • 2 tbsp Corn starch
  • 1/2 cup Pineapple juice
  • 1/2 cup Brown sugar
  • 1/2 cup Water
  • 2 tbsp Ground ginger or 1 tbsp fresh grated
  • 1 tbsp Garlic
  • 1 tbsp Sesame seeds

Instructions

Wings

  • In a small bowl, whisk together the pineapple juice and cornstarch until dissolved. Whisk in the remaining ingredients. Transfer to a small saucepan and bring to a simmer on medium heat, whisking until thickened, about 2-3 minutes. Remove from the heat and set aside. Reserve half for brushing on the wings during cooking and half for serving.
  • Place clean dry wings on a grill with medium heat and brush with oil, then sprinkle with salt and pepper.
  • Grill wings 8-10 minutes per side or until cooked through. During last few minutes of grilling, brush wings with marinade.
  • Remove the wings from the grill and toss the remaining teriyaki sauce on top of the wings.
  • Garnish wings with sesame seeds and serve with blue cheese or ranch dressing.

Can you believe winter holidays and Hanukkah have rolled around again? One of the most popular Hanukkah traditions is making potato latkes. Because they are fried, they are messy with grease splattering everywhere and they also leave an odor in your home.

There is a simple solution to this pancake mess, and it’s sitting right in your backyard: your propane grill. That’s right! Fry your latkes outside on your propane grill and eliminate the mess and grease smell.

You can fry them ahead of time or make frying them on the grill the star of your holiday gathering. Light a fire outside, make some winter-themed drinks, and you can get your guests out of the kitchen and into the fresh air.

We know everyone has their favorite potato latke recipe, usually passed down from generation to generation so we encourage you to prepare your latkes the way you normally do. The difference is at fry time:

  1. Before you shred the potatoes, set a large rimmed cast-iron griddle or 2 large cast-iron skillets on a propane grill and heat to medium-high (400°). Make sure the grill is level so that oil will flow evenly across the griddle; you may have to add shims (such as pieces of cardboard) under your grill’s feet.
  2. Carefully drizzle enough oil into the griddle or skillets to reach a level of ¼ inches deep in the hot skillet. Drop spoonfuls (about 1 1/2 tbsp. each) of potato mixture onto the griddle and spread about 1/4 in. thick. Fry latkes, covered, until crisp-edged and golden brown underneath. Using 2 spatulas, turn over and grill until cooked through 5 to 8 minutes total. Lift to a platter lined with paper towels or baking sheet (if making ahead of time) and press gently with more paper towels to remove excess oil. Sprinkle with salt if you like.
  3. Serve warm with your favorite toppings and call us when ready (or at least tag us in your shared photos on social media).

Thanksgiving will be here in one short week! For anyone hosting family and friends, panic might be setting in. While we can’t make your house bigger or the family drama disappear, we can help you make room in your oven.

Everyone frets about how they’re going to (1) fit a giant turkey into the oven and (2) fit anything else in the oven at the same time. The answer to freeing up valuable oven space is simple: use your propane grill! It might not be the most common method, but your bird will turn out just as plump and juicy as it would in a traditional oven.

Before you do any turkey prep, the most important step is to make sure your propane tank is full. You don’t want to run out of propane in the middle of cooking!

You can defrost and prepare your turkey in the same manner you would traditionally. However, we recommend placing the bird in a doubled up disposable roasting pan. This will prevent any issues with placing your metal roasting pan on the grill (discoloring and possible warping) and makes clean-up a breeze!

At go time:

  1. Pre-heat your grill to medium-high heat (around 450 degrees F) and turn all burners on.
  2. Once the grill has reached 450 degrees F, place the turkey in the double lined disposable roasting pan breast side up. Pour 1 to 2 cups of chicken broth in the bottom of the roasting pan.
  3. Place the roasting pan on the grill and turn the center burner to medium-low. Close the grill. You want to maintain a temperature between 425 to 450 degrees F during cook time.
  4. Grill the turkey for 2.5 to 3 hours, checking the bird every 30 minutes or so, basting with juices from the bottom of the pan.
  5. Halfway through cook time, rotate the roasting pan and add more stock to the bottom of the pan if needed.
  6. After 2 to 2.5 hours (depending on your birds size), check the turkey’s temperature. You want the temperature taken in the thigh to reach 180 degrees F.
  7. Once finished, let the turkey rest for 30-60 minutes.
  8. Slice, serve, and enjoy!
