Balsamic Quinoa Caprese Salad

Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable stock
  • 2 cups rainbow cherry tomatoes halved
  • 1 cup fresh mozzarella balls halved
  • ½ cup fresh basil leaves shredded
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp balsamic glaze
  • salt & pepper to taste

Optional Ingredients

  • Option to replace vegetable stock with any other stock or broth flavor, or water.
  • ½ cup walnuts chopped

Instructions

  • In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  • While the quinoa is cooking, chop the rainbow cherry tomatoes, halve the mozzarella balls, and shred or thinly slice the fresh basil leaves.
  • Once the quinoa is finished cooking, fluff quinoa with a fork. Using a large mixing bowl, combine all ingredients.
    Begin with the fluffed quinoa, followed by halved rainbow cherry tomatoes, halved mozzarella balls, and shredded basil. Season with salt and pepper to taste, drizzle with olive oil and stir together until well combined.
  • Refrigerate large mixing bowl with ingredients for at least 30 minutes to let the flavors meld.
  • Toast each slice of bread on the grill for 1-2 minutes or until golden brown.
  • Bring out the refreshing Quinoa Caprese Salad, top with balsamic glaze and garnish with additional basil leaves.
  • If desired, add walnuts or protein to elevate this meal.
  • Serve and enjoy!

  • 1 lb Green Beans washed and trimmed
  • 1 Lemon
  • 3 cloves Garlic minced
  • 2 cuptbsp Olive Oil
  • Salt & Pepper to taste

Optional Ingredients

  • Red Pepper Flakes for a hint of heat
  • Slivered or Sliced Almonds for flavor and texture

Instructions

  • Prepare the Green Beans: Wash the green beans thoroughly and trim the ends. If you prefer a more tender texture, blanch the green beans in boiling water for 2 minutes, then immediately transfer them to an ice bath to stop the cooking process.
  • Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until it becomes aromatic. Be careful not to burn the garlic as it can turn bitter.
  • Cook the Green Beans: Add the prepared green beans to the skillet. Stir well to coat the beans evenly with the garlic-infused oil. Cook for 8-10 minutes or until the green beans are tender-crisp, stirring occasionally.
  • Add Lemon Zest and Juice: Sprinkle lemon zest over the green beans for a burst of citrus flavor. Squeeze the lemon juice of one lemon over the beans, stirring to combine. Begin with half the lemon for flavor, and add more based on preferences.

Homemade Cranberry Sauce Recipe

Ingredients

  • 4 cups fresh or frozen cranberries
  • 1 cup granulated sugar for sugar-free substitute with sweetener of choice
  • ½ cup water
  • ½ cup orange juice
  • zest of one orange
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • pinch of salt to taste

For additional flavors based on preference, the following ingredients pair beautifully for the ultimate homemade cranberry sauce recipe:

  • Seasoning: cinnamon, nutmeg, or allspice
  • Texture: pecans, walnuts, or raisins

Instructions

  • Start by rinsing cranberries under cold water and discard any bruised or damaged ones, and drain when clean. Removing damaged cranberries helps ensure a clean and flavorful sauce
  • In a medium saucepan, add sugar, water and orange juice, and bring the mixture to a gentle boil over medium heat, stirring occasionally to help dissolve the sugar.
  • Once sugar has dissolved, combine the cranberries, orange zest, cinnamon, nutmeg, and a pinch of salt.
  • When mixture reaches a boil, reduce the heat to low and let the sauce simmer for 15-20 minutes or until it reaches your desired thickness. During this time. the cranberries will begin to burst, releasing their natural juices and flavors.
  • Stir occasionally to prevent sticking, and taste the sauce during the process to determine flavor. If you prefer it sweeter, add a bit more sugar to suit your taste.
  • Once the sauce is ready, remove it from the heat and let it cool. As it cools, the sauce will continue to thicken.
  • Once cooled, refrigerate until ready to serve.

Quinoa Stuffed Acorn Squash Recipe

  • 1 Propane Oven

Ingredients

  • 2 Acorn squashes, halved and seeds removed
  • 1 cup Quinoa, rinsed
  • 2 cups Vegetable broth
  • 1 tbsp Olive oil
  • 1 Onion, finely chopped
  • 2 Cloves garlic, minced
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • ½ tsp Cinnamon
  • Salt and pepper to taste
  • ½ cup Dried cranberries
  • ½ cup Chopped walnuts
  • Fresh parsley for garnish

This recipe can be seamlessly customized based on your preferences. Options include:

  • Add/replace walnuts for almonds or pecans, sunflower or pumpkin seeds
  • Add any vegetables into the mixture, such as carrot, bell pepper, or mushroom
  • Add a crumbled goat cheese and honey drizzle topping for extra flavor

Instructions

  • Preheat your oven to 375°F (190°C).
  • Place the acorn squash halves on a baking sheet, cut side up. Brush the insides with olive oil and sprinkle with salt and pepper. Roast in the preheated oven for 30-40 minutes or until the squash is tender.
  • While the squash is roasting, prepare the quinoa. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  • In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
  • Add the cooked quinoa to the skillet with the sautéed onion and garlic. Stir in the cumin, paprika, cinnamon, dried cranberries, and chopped walnuts. Season with salt and pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld.
  • Once the acorn squash is tender, fill each half with the quinoa mixture.
  • Garnish with fresh parsley for a burst of color and freshness.

Sweet Potato Casserole with Marshmallows

  • 1 Propane Oven

Ingredients

  • 4 Sweet Potatoes medium sized
  • 1/2 cup Brown Sugar
  • 1/4 cup Melted Butter salted or unsalted
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/3 cup Milk
  • 1/2 tsp Salt
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1 1/2 cups Marshmallows mini or standard size
  • 1/2 cup Crushed Pecans optional

Instructions

  • Cook the Sweet Potatoes: Preheat your propane powered oven to 350°F and bake them in the for about 45-50 minutes till soft. Pierce the sweet potatoes with a fork to check of softness. Let them cool for a few minutes. Option to peel or scoop the potato out. Add to a large mixing bowl and mash.
  • Mix Ingredients: To the mashed sweet potatoes, add the brown sugar, melted butter, eggs, vanilla extract, milk, salt, ground cinnamon, and ground nutmeg. Mix well until all the ingredients are combined.
    Option to mix crushed pecans into sweet potato mash.
  • Transfer to Baking Dish: Transfer the sweet potato mixture to a greased 9x9-inch baking dish or a similar-sized casserole dish. Smooth the top with a spatula.
  • Marshmallow Topping: Sprinkle the marshmallows evenly over the top of the sweet potato mixture.
    Option to add crushed pecans as topping with marshmallows.
  • Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.
  • Serve: Remove the sweet potato casserole from the oven and let it cool for a few minutes before serving. Enjoy your sweet and gooey sweet potato casserole with marshmallows!

Grilled Veggie Pasta Salad

Equipment

  • 1 Propane Grill
  • 1 Propane Stove

Ingredients

  • 1 box Pasta
  • 6 oz Feta crumbled
  • 2 ears Corn on the cob
  • 2 sweet Peppers
  • 2 yellow Squash
  • 2 medium Zucchini
  • 1 red Onion
  • 1 bottle BBQ sauce
  • 1 bottle Ranch dressing

Instructions

  • Boil/Cook pasta, al dente, according to box directions. Let cool.
  • Grill veggies on a propane grill to desired tenderness. Let cool.
  • Once cooled, cut corn from the cob and dice up all other veggies.
  • Add cooked pasta and diced veggies to a large bowl.
  • Add in feta cheese.
  • Add in a 50/50 mix of BBQ sauce and Ranch dressing. The amount depends on your taste. (This is similar to or replacing the mayonnaise in a traditional macaroni salad. You want enough to cover/coat the pasta and veggies.)
  • Stir/mix well and enjoy!
  • It is best to let this sit overnight. May need more BBQ/Ranch sauce the next day as the pasta will absorb some of it. Enjoy for up to a week or so.

May 2nd is known as National Truffle Day. A day to celebrate this delicious, fragrant mushroom that grows underground near truffle oaks usually found in France. Truffles are considered a delicacy and some versions, like the black truffle, can sell for $900 a pound. Thankfully, a bottle of truffle oil retails for around $20 and can be found in most grocery stores.

Besides making truffle fries, you can use the same recipe to elevate tater tots. Truffle oil is also delicious on pasta, as a vinaigrette in salads, drizzled over popcorn or to dip bread into.

  • Cook the French fries according to the directions on the bag.
  • Once the fries are cooked, strain them from the oil (if you fried them) or remove them from the oven, and toss them in a large bowl with the Parmesan cheese, truffle oil, parsley, and salt and pepper.

Can you believe winter holidays and Hanukkah have rolled around again? One of the most popular Hanukkah traditions is making potato latkes. Because they are fried, they are messy with grease splattering everywhere and they also leave an odor in your home.

There is a simple solution to this pancake mess, and it’s sitting right in your backyard: your propane grill. That’s right! Fry your latkes outside on your propane grill and eliminate the mess and grease smell.

You can fry them ahead of time or make frying them on the grill the star of your holiday gathering. Light a fire outside, make some winter-themed drinks, and you can get your guests out of the kitchen and into the fresh air.

We know everyone has their favorite potato latke recipe, usually passed down from generation to generation so we encourage you to prepare your latkes the way you normally do. The difference is at fry time:

  1. Before you shred the potatoes, set a large rimmed cast-iron griddle or 2 large cast-iron skillets on a propane grill and heat to medium-high (400°). Make sure the grill is level so that oil will flow evenly across the griddle; you may have to add shims (such as pieces of cardboard) under your grill’s feet.
  2. Carefully drizzle enough oil into the griddle or skillets to reach a level of ¼ inches deep in the hot skillet. Drop spoonfuls (about 1 1/2 tbsp. each) of potato mixture onto the griddle and spread about 1/4 in. thick. Fry latkes, covered, until crisp-edged and golden brown underneath. Using 2 spatulas, turn over and grill until cooked through 5 to 8 minutes total. Lift to a platter lined with paper towels or baking sheet (if making ahead of time) and press gently with more paper towels to remove excess oil. Sprinkle with salt if you like.
  3. Serve warm with your favorite toppings and call us when ready (or at least tag us in your shared photos on social media).
